Beer and Food Pairing Cooking Course December 6, 2016Although it was our first attempt to make Thanksgiving dinner this year, we were able to amaze our friends and family...Thanks to our secret weapon-taking a class from Chef Eric. With his wonderful gourmet recipes, tips/tricks to wow our guests, and hands-on practice with preparing the meal during class, our Thanksgiving was a success. We are already looking forward to attending another one of his classes.

Beer and Food Pairing Cooking Course May 10, 2016Taking Chef Eric's cooking classes has been life changing! Over the past year, I transitioned from just loving to EAT good food to having to learn how to COOK good food due to health issues in the family. By the beginning of January 2016, I decided to take some cooking classes evening though I was already cooking delicious healthy meals every day. I first signed up for a knife skills class in January 2016 to get a taste of what Chef Eric's cooking class would be like. I liked it immediately and learned how to chop, cut, and mince more efficiently and proficiently. I had a hunch that if I signed up for a series, learning and practicing these skills weekly with a professional chef would be invaluable. So I signed up for the Culinary Basics Series in February. I ABSOLUTELY LOVED the taking this series! For me, it was not about the recipes (you can find the menu on the website). It was about learning so many skills in a fun and safe environment. I learned SO much about food prep and safety and storage. There were so many life-changing pearls that I learned. I learned simple things that I didn't know how to do before such as mince garlic (I had always bought minced garlic in a jar before), how to make a garlic paste, how to properly make vinaigrette dressings as well as aioli. Each person in the class was at a different skill level AND had different food allergies and despite these challenges, Chef Eric was able to accommodate all of us with substitutions for food allergies. He answered countless questions with a smile and bounce in his step.
I felt that no matter what I thought I knew, there was so always so much to learn. For example, even though I already cooked fish several times a week, I learned new techniques such as smoking fish or making pastry wrapped fish. I also learned how to debone fish and take off the skin. I was introduced to new ingredients that I had never worked with before such as chayote squash, poblano chili, chili leaves, and swiss chard. I learned more complicated things that I would have never tried before like making homemade pasta, spaetzle, and roast peppers over an open flame. After taking our turn each practicing a different dish, we would feast at the end of the night on our creation!
I came away from the series, inspired. I felt that I had found a new passion for cooking that I didn't have before. Prior to taking the course, cooking was a chore, a means to an end. After demystifying cooking through the cooking classes, I had a newfound excitement for cooking that was immediately noticeable. Learning how to do things more efficiently also diffused all the time that I had previously spent, frustrated in the kitchen, and gave me so much more enjoyment in the actual process of cooking. My food was immediately transformed. It was amazing what a difference properly minced fresh garlic made to a dish! I also learned how to present the food -- hot food goes on hot plates and cold food on cold plates -- in a beautiful way. Thank you Chef Eric, for igniting my passion for cooking!
P.S. I am now taking the Healthy Cooking Series and am having SO MUCH FUN!!! -

Chef Eric and his team were great in the kitchen - Chef had a great energy level that kept everyone engaged. I would hold an event here again!
