    Paella & Tapas Cooking

    Paella is one of Spain's most well-known dishes, so if you haven't heard of it before now, it's time to feel a little self-conscious. Thank goodness no one else saw that. This classic dish is a perfect showcase of the delicious meats and seafood that make this country a sought-after culinary destination. There are many types of paella, but the best known are Valencian paella, seafood paella, and mixed paella. Valencian paella consists of a combination of white rice, green vegetables, meat (chicken and rabbit), land snails, beans, and seasoning such as saffron, rosemary and occasionally lemon. Seafood paella replaces meats with seafood and omits beans and green vegetables. Mixed paella is a more free form combination of land animals, seafood, vegetables, and sometimes beans. Learn this delicious signature dish to make for your next get together; your guests won't be disappointed.

    Pastas and Sauces

    For most of us, pasta with sauce is a dinner as simple as boiling boxed noodles and adding Ragu, but pasta can (and should) be so much more! This course will help you bring the color and taste of fresh homemade pasta to your kitchen. You will make colorful spaghettis, gnocchi, ravioli and even lasagna from scratch and learn to combine them with different classic and original sauces. In the first lesson you will create simple, colored pastas including Tagliatelle, Spaghetti and Farfalle with typical sauces like Pomodoro Basílico, Carbonara, and Genovese Pesto. In your second lesson you will work on filled pastas such as Ravioli, Panzotti, Agnolottis, and Cappelletti's with Potenza, Green Sauce, and Cream Caviar Sauce. In your third lesson you will make 3 varieties of Gnocchi with Scarparo, Four cheeses, and Fresh Basil sauces. And for your final class you will perfect rolled and filled pastas like Cannelloni and Lasagna with a simple White Sauce. Step away from the Ragu, and learn how to make pasta the grown up way.
