Lamb, goat, and pork dishes are abundant in the Greek cuisine, depending on the season and the occasion. During your lesson you will practice some simple recipes and ideas of how to cook and pair them in your everyday cooking. You'll prepare lamb casserole in red wine and light garlic aromas (arni sti gastra), slow cooked goat (kleftiko), spicy country sausages and peppers in tomato sauce (spetzofai), and pork tenderloin with leek and celery root (hirino me prasso). Through the years, and with the economic growth the French pastry chefs and their elaborate creations have influenced the Greeks. However, the newest trend – Modern Greek Baking - incorporates olive oil instead of butter in many western recipes, transforming them into healthier ones. During this lesson you will be introduced to basic baking techniques along with simple, but original olive oil desserts, plus a traditional Greek holiday treat. You'll prepare olive oil dairy free cake, olive oil chocolate biscuits, olive oil lava cake, and olive oil and orange flavored holiday cookies in honey syrup (melomakarona).
