About this Activity
Traditionally, the Greek family gathers after church and enjoys a rich meal (and some drama!), followed by a siesta in the living room. In this class, you’ll get the chance to explore the many health benefits of this frugal diet, which is free of elaborate techniques and includes nutrient packed fruit, nuts, legumes, and vegetables along with wheat, olive oil, and wine. Learn to cook with wild greens and weeds that are cheap and easily accessible to all and hence consumed regularly, are lightly boiled or used in pies, and utilize fragrant spices such as oregano, mint, garlic, onion, dill and bay leaves. Your menu includes Greek roasted chicken with potatoes, casserole leg of lamb with Greek herbs, red sauce chicken with bucatini pasta from Corfu island, and milk pie from Mani. The recipes included in this lesson are easy to make, do not require long preparation time, are topped with one dessert, and incorporate wine pairings. After this class, you’ll never again struggle with the dreaded “What should I make for dinner?!” dilemma again!
